Nose : flattering cherry bouquet, subtle scents of smokiness and coffee.

Mouthfeel : Refreshing tannins at first which develop into something silky and full-bodied.

A refined wine to wait for during 12 to 18 months.

Maintaining the vines :

Based on some classified « grands crus » techniques, many operations on the vines are carried out manually plant by plant : disbudding, thinning the leaves, removing the early new shoots, grape thinning.

Vinification :

Harvests are carried out by hand in trays. The grapes are sorted twice before being destemmed.

The vinification process is traditional and takes place in small concrete vats separated per grape variety. The pumping-over process takes place twice a day.

Maceration time : 30 to 40 days.

The running-off is done directly into French oak barrels thanks to gravity. The malolactic fermentation takes place in the barrels. Aged in new French oak barrels of 1 wine
